Today’s dish is another low budget meal that is highly nutritious and contains a balanced ration of all essential nutrients.
Okpa is a native dish of the Igbos in the South Eastern part of Nigeria. It’s not exclusive to the Igbos, as it is also eaten by other ethnic groups in Nigeria. To prepare a delicacy of okpa, you need the following;
Ingredients
Bambara Nut Powder
Pepper
Onion
Palm oil
Salt
Seasoning
Grounded Crayfish
Banana leaves or Nylon
How To Prepare
1. Sieve the bambara nut flour.
2. Add the crayfish, seasoning and salt to sieved flour.
3. Pour oil into the mixture and mash thoroughly.
4. Pour warm water in the mixture till your preferred consistency is reached.
5. Add blended pepper to the mixture and mix thoroughly.
6. Put water on fire and allow to boil.
7. Use your already washed leaves or nylon to wrap the okpa into small sizes.
8. Place the wrapped okpa in the boiling water and allow to cook till it’s done.
Nutritional Benefits Of Okpa
Okpa is highly nutritious because it is rich in protein, minerals, fibre, amino acids and antioxidants. It is also low in fat which makes it suitable for weight loss and healthy heart.
