Today’s dish is a low-budget meal that’s nutrient-packed. It is of course no news, that the economy is unfriendly, and everyone is grappling and barely keeping afloat. Food enthusiasts are only left with experimenting and cooking meals that are less costly but healthy and nutritious. Our dish for today is a perfect example.
Potato porridge, is made from sweet potato a common and cheap staple food. It is mostly eaten as a variant of yam porridge, particularly when it is in season because it is cheaper than yam. To treat yourself to a plate of potato porridge, you need the following;
Ingredients
Sweet potato
Pepper
Onions
Palm oil/ Vegetable oil
Salt
Seasonings
Dried fish
Dried or fresh vegetable leaves
How To Prepare
1. Peel the sweet potatoes, cut into pieces then wash until clean.
2. Cook the potato in boiling water.
3. Add vegetable/palm oil to the potato.
4. Add pepper and onions.
5. Add the dried fish, salt and seasonings.
6. Add the vegetable leaves and allow to steam.
7. The potato porridge is ready when it thickens.

Potato porridge is a highly nutritious meal. The main ingredient sweet potato is rich in fibre, minerals, vitamins and antioxidant.
